Maple Glazed Roasted Carrots


carrots 250gm, cut in same size (or use baby carrots)
maple syrup 2 TBSP
nutmeg 1 teaspoon
Olive Oil 1 to 2 TBSP
Fresh thyme (optional)
Salt & Pepper


Preheat the oven to 400°F
Dry the carrots you will be roasting
In a bowl, add carrots, maple syrup, nutmeg and a pinch of salt & pepper to taste. Mix gently.
Sprinkle 1 to 2 TBSP Olive oil and toss to coat
Spread carrots out on an Oven sheet pan.
Bake for 15 minutes or until carrots become tender.
Take the pan out of the oven and let cool slightly. Garnish with fresh thyme and enjoy.

Winter Salad


spinach, Lettuce or spring green mix 200gms
mandarin oranges peeled 2-3
pomegranate 1 large
wild rice 1 cup cooked
chicken breasts boiled and crumbled 2
parmesan cheese 1/3 cup shredded
creamy poppy seed dressing


Cook wild rice and keep it aside
Peel off pomegranate and remove seeds. and take a half a cup of these seeds.
Take a large bowl and add greens, top it with oranges pomegranate seeds, rice chicken breast, and cheese.
Add some salt and pepper and mix well.
Prickle the poppy seed dressing on the top and serve.
