They make pretty much every meal better, breakfast, lunch, and dinner included.avocados contain quite a bit of potassium, dietary fiber, and fats. Avocado oil alone is almost two-thirds (71 percent) monounsaturated fatty acids

Recipe 1 Avocado Guac
Ingredients:
2 avocados, pitted, 1/2 c. Lettuce, 1 cup cherry tomatoes, halved, 4 slices bacon, cooked and chopped, 1/4 c. green onions, Juice of 2 limes, kosher salt, Freshly ground black pepper, Tortilla chips, for serving



Preparation:
Pan fry bacon in pan and chip them into medium size pieces. In a large bowl, mash avocados until smooth but still slightly chunky.
Stir in lettuce, tomatoes, bacon and green onions. Squeeze lime juice over mixture and stir, then season with salt and pepper.
Serve with tortilla chips.

Recipe 2: Avocado Pops
Ingredients:
3 ripe avocados ,Juice of 2 limes (about 1/3 cup), 3 tbsp. Swerve or other sugar alternative , 3/4 cup coconut milk, 1 tbsp. coconut oil, 1 cup keto friendly chocolate.




Preparation:
Into a blender or food processor, combine avocados with lime juice, Swerve, and coconut milk. Blend until smooth and pour into popsicle mold.
Freeze until firm, 6 hours up to overnight.
In a medium bowl, combine chocolate chips and coconut oil. Microwave until melted, then let cool to room temperature. Dunk frozen pops in chocolate and serve. can read coconut powder over the pop s for extra taste.
